The infusion made from butterfly pea flowers takes on a dark blue colour, which turns purple-pink when lemon juice is added. Butterfly pea tea is characterised by its herbal aroma. The taste is somewhat reminiscent of green or red tea. Clitoria flowers can be made as a stand-alone infusion or added to tea or yerba mate. They are often used in culinary applications because of their colouring properties. They are added to desserts or drinks.

How to prepare Mary Rose Butterfly Pea Tea?

Pour 1 teaspoon of Butterfly Pea Tea over water at a temperature of approximately 90-100 °C. Allow to infuse for 10 minutes. Do not brew the clitoria flowers more than once - they give up their full flavour and aroma the first time they are infused. Butterfly pea can also be added to other types of tea or to yerba mate.
